Extenders can be of animal or plant origin, for example blood plasma, soy derivatives, sodium caseinate, whey proteins, among others.[2]

Meat extenders have the function of reducing the amount of meat used by extending its contents without altering its organoleptic characteristics.[3] In simpler terms, if an extender is added to a given amount of CMD, it is possible to increase its original weight while maintaining the expected quality.

It is important to maintain a strict development protocol in order to add the right amount of extender, as excessive use could generate negative characteristics in the final product.
